People have been drying foods for over 2,000 years..................................
Traditionally jerky is hot. In the early days, hot pepper was used to keep birds and
other curious creatures away from the jerky while it was drying in the sun.
Jerky has many names, one of the earliest being "Sharmoot" (Northern Africa). The
word "Jerky" is a corruption of the Spanish "Charqui", referring to meat from wild
game captured by early sailors. The recipe was simple in these days, salt and sun
made the meat well preserved for long voyages.
At Caribbean Specialty FoodsTM ................................................
Using this 2,000 year old recipe and the 21rst century technology, we have the latest
in curing, flavoring, dehydration and packaging methods.
